Ingredients

Steps


    • In the first step, 2 teaspoons of oil are heated over medium heat in a sizable cast-iron skillet. When the oil in the skillet is hot, add the diced onions and sauté them for about 3 minutes, or until they are translucent. Next, using damp hands, form the sausage into four patties that are each 1/4-inch thick, and add them along with the onions to the skillet. After that, the heat is raised to medium-high, the onion is turned over, and it is cooked for an additional 2 to 3 minutes, or until it is just soft. After that, the patties are cooked until browned, which usually takes 2 to 3 minutes per side.

    • The rings of onion slices are cut into pieces and placed on top of the browned patties in the skillet. The onion rings are then covered with crumbled Cheddar cheese, and the skillet is heated for an additional 2 to 3 minutes, or until the sausage is well cooked.

    • In the meantime, in a large nonstick skillet, heat the remaining 2 teaspoons of olive oil over medium heat. The next step is to cook the eggs to the desired doneness, which usually takes 4 to 5 minutes for runny yolks. After the eggs are cooked, the sausage, eggs, pepper slices, and parsley are placed on the bottom halves of the muffins. The sandwich can then be finished by laying the top half of the muffin on top of the components, and eaten right away.
