Ingredients

For The Noodles

  • Large red pepper, one
  • five spring onions
  • 400g of beansprouts, cut in half
  • 1 or 2 big chicken breasts
  • 3 medium egg noodle nests
  • 1 tbsp. sunflower oil

For The Noodles

    • little piece of fresh root ginger
    • Garlic cloves, two
    • 3 tablespoons tomato ketchup
    • 1 tablespoon oyster sauce
    • 2 tablespoons reduced-sodium soy sauce

    Steps

      • The sauce must be made beforehand in order to make this dish. Peel the skin off the ginger first with a potato peeler. After removing the skin, shred 1 tablespoon of ginger into a bowl. The garlic should be crushed before the ketchup, oyster sauce, soy sauce, and 3 tbsp of water are added. Mix everything thoroughly.

      • Next, prepare the vegetables and chicken. Cut the pepper into quarters and remove the seeds and stalk, then slice diagonally into strips. Cut the ends from the spring onions and cut the green and white parts of the onion lengthways. Open the bag of beansprouts. Cut the chicken into bite-size pieces.

      • Boil a large pan of water on the hob. When the water is boiling, drop in the noodles and turn off the heat. Set the timer for 4 minutes. When the time is up, drain the noodles in a colander or large sieve in the sink. Ask an adult to help you.

      • With all the ingredients prepared, it's time to start cooking. Heat the wok until it starts to smoke, then add the oil and chicken. Use a wooden spoon to keep moving the chicken around the wok until it is half white, half pink. Add the sliced pepper and stir-fry for a further 1 minute.

      • Pour the sauce into the wok and stir well until it starts bubbling.

      • Finally, add the cooked noodles, beansprouts, and spring onions a handful at a time, then toss them into the sauce until well coated, stirring constantly until the beansprouts wilt. Serve in bowls, using tongs for easy serving. Enjoy your delicious chicken chow mein!
