Ingredients


For the foundation
  • 125 grams of whole wheat flour, plus additional flour if needed for kneading
  • 12 teaspoon instant yeast
  • a dash of salt
  • 1 teaspoon rapeseed oil plus more for grating

  • 2 tsp rapeseed oil
  • 2 large garlic cloves, finely grated
  • 4 pitted Kalamata olives, quartered few soft thyme leaves
  • 2 onions, halved and thinly sliced
  • 1 tsp sunflower seeds
  • 2 tsp balsamic vinegar
  • 160g baby spinach leaves (not the very tiny ones), chopped
  • 50g soft goat's cheese


Steps


  • Pre-heat your oven to 220C/200C fan/gas 7 before you begin to make the pizza. To make a soft dough, mix the flour, yeast, salt, oil, and water in a bowl or with a dough hook on a stand mixer. Avoid adding too much additional flour as you knead for about 5 minutes with a food mixer or 10 minutes by hand. Place in a tea towel and cover to reserve.

  • Make the topping following. To help the onions soften, cook them in a non-stick wok with oil, water, and balsamic vinegar while the lid of the wok is on. Once they are golden and the liquid has completely evaporated, stir them every 15 minutes. In the same wok, stir-fry spinach and garlic after transferring to a platter.

  • Using an oiled knife, divide the dough in half. Without first kneading the dough to prevent it from being too elastic and shrinking back, press each half into a 25–15 cm oval on a sizable prepared baking sheet using oiled hands.

  • On the dough, layer the spinach, then the caramelized onions, cheese, olives, thyme, and sunflower seeds. Bake the pizza for 15 minutes, or until the base is cooked through and brown.
