Ingredients


  •         225g self-raising flour, plus extra for dusting
  •         1 tsp baking powder
  •         120g mature cheddar, grated
  •         55g chilled butter, cut into cubes
  •         90-100ml milk, plus 1 tbsp for glazing
  •         pinch of cayenne pepper
  •         pinch of salt


Steps


  • A big baking tray should be inside the oven, which is preheated to 200°C/180°F/gas 6. To ensure sure the ingredients are well-combined, sift the flour, salt, cayenne pepper, and baking powder into a bowl.

  • Using your fingertips, create breadcrumbs by incorporating the butter into the bowl. While you mix the breadcrumb mixture, sprinkle 100g of the cheese over it and distribute it evenly. Try to avoid over-mixing to avoid melting the butter due to the heat from your hands.

  • To create a reasonably soft but firm dough, create a well in the middle of the mixture and pour in just enough milk. Don't pour in the entire amount of milk at once; you might not require it all to achieve the desired consistency.

  • Roll out the dough to a thickness of about 2 cm after lightly flouring the work surface. Using a medium (about 8 cm) cutter, cut out the scones. Place them on a piece of parchment paper, brush them with milk, and then top them with the remaining cheese. Place the pan onto the hot oven rack.

  • For 15 to 20 minutes, bake in the oven, or until well cooked and golden.
