Vegan burritos

Ingredients
- 8 tiny or 4 large tortilla wraps
- 2 substantial handfuls of shredded spinach leaves
- thinly sliced avocado; optional spicy sauce; to serve
- For the black beans with chipotle
- 1 tablespoon of oil
- 1 smashed garlic clove
- Chipotle paste, 1 tablespoon
- 400 g of canned diced tomatoes
- 400 grams of dried black beans
- 1 bunch chopped coriander
- For the rice with red onions and lime,
- 250g cooked and drained whole grain rice
- one lime, juiced; one-half of a red onion, finely chopped
- 50 grams of roughly chopped hazelnuts
Steps
- To create the beans, warm up the oil in a skillet, add the chipotle paste, and saute the garlic for one minute. Tomatoes should be added, stirred, and simmered. use salt to season. Stir in the coriander after adding the beans and simmering until it has thickened (being sure to cook out any water first).
- If you're using cold cooked rice, heat it through before adding the lime juice, red onion, almonds, and salt and pepper to taste.
- Spread the tortillas out, top with some spinach, rice, avocado slices, and the bean mixture. If you'd like, add a shake of hot sauce. To prevent the filling from spilling out as you roll, first roll the bottom up, then fold the sides in. If desired, wrap tightly in foil and cut in two.
